Recipes

Here you can find the best vegan recipes ever. I will gather recipes from other sites and try to develop my own recipes (I am not the best cook).

My own recipes:
Nice after-sport drink
250 ml vanilla soy milk/vanilla rice milk
1 banana
2 tablespoons of a vegan protein powder (I use Biotona, because it is unsweetened)
About 125 grams of other frozen fruit that mixes well with vanilla (like raspberry, blueberry, blackberry).

Put everything in a blender and mix!

Vegan honey-mustard sauce
Ingredients
* Vegan mayonaise (Remia Mayolijn is vegan and delicious! Or make it yourself).
* Mustard
* Lemon juice
* Ahorn sirup
* Additional: salt and pepper, but also other herbs like dill

Method
The ingredients are given in the correct order; you will need more mayonaise than ahorn sirup.
I normally use 2 tablespoons of mayonaise, 1-2 teaspoons of mustard, a few squeezes of lemon juice and a shoot of ahorn sirup. Make it the way you like it, maybe you like a sauce with more mustard better. I actually never add pepper and salt, but I do add dill almost all the time, that is the way I like it best.

My favorite recipes (external sites):

Vegan tompouce (all credits to the Vegan challange)
For Dutch people, you can simply klick at the link and read it in Dutch (but I give some tips below): http://veganchallenge.nl/paas-tompouce/
The recipe in English:
Ingredients (for about 4 big tompouces)
·         55gr Custard powder
·         250 ml soy cream (I used alpro cuisine that is not in the fridge, next to the uncooled milk)
·         250 ml vanilla soy milk
·         70 gr sugar (I only used 40, is already sweet enough!)
·         8 sheets of vegan puff pastry (Tante fanny and AH brand are vegan)
·         75 gr of powdered sugar
·         1.5 spoons of vegan milk (like soy milk) or water
·         Kurkuma powder (additional)

Method
·         Make the custard by mixing the custard powder with the soy cream, vanilla soy milk and sugar in a pan. Warm it until it boils and thickens. Once this happens, get the pan off the fire and  let it cool, while every now and then stirring the mixture as it cools.

TIP (also for the Dutch): keep stirring while the mixture comes to a boil and boils, otherwise you will burn it and this happened to my first batch. Also don’t make more than this at ones, that also burns pretty fast. I made the filling in 2 batches!

·         Preheat the oven at 200 degrees Celsius.
·         Put the puffy pastry on a baking tray and use a fork to make some holes in the pastry. Bake the puffy pastry for 10-15 minutes (depending on your oven), until it is light brown of colour. Let the baked pastry cool.
·         Make the glazing by mixing the powdered sugar with some vegan milk/water.
I always did this on experience, as the glazing shouldn’t be too thick or too runny. I never worked with the 75gr of powdered sugar and 1.5 spoon of vegan milk. It should be slightly runny. Adding some kurkuma will give it a yellow colour and extra taste.
·         Cut the baked pastry sheets in half, so you get a bottom and top.
(I actually cut them before baking, is also possible).
·         Assemble the tompouce. I used a spoon to put the pudding on the bottom.
·         Let it stand in the fridge for at least an hour.

Here I made them mini-sized, 80 pieces of them!

Vegan chocolate brownie (one small piece already fills you!)
Ingredients:
* 270 gram flour
* 88 gram cocoa powder
* 1 teaspoon of cayenne pepper
* 1 teaspoon of salt
* 1 teaspoon of baking powder
* 200 gram of sugar (in the original 400 gram, but not necessary!)
* 250 ml of hot water
* 250 ml of oil (like sunflower)
* 1 teaspoon of vanilla aroma

Method
- Preheat the oven at 180 'C.
- Mix the flour, cocoa powder, salt, cayenne pepper and baking powder in a bowl.
- Dissolve the sugar in the hot water and add it to the mix.
- Now also add the oil an vanille aroma and mix it into a smoot batter.
- Put the batter in a baking tray.
- Bake 25-45 minutes, depending on how soft you want your brownies to be and the functioning of your oven.
I didn't taste the cayenne, so you might want to add more if you want to.

ENJOY THE VEGAN FOOD :D!
